The 2.5 mm carbon steel is hardened to 56- 60 HRC. Cutting edge is sharpened in several stages, with a final honing on a leather strop. Carbon steel is well known for sharpness. Maintenance sharpening with Swiss Istor and leather stropping dress with metal stropping compound. Keep dry with beeswax paste on carbon steel knife to prevent rust in storage.
