Set of 2 Japanese Kitchen knives to slice and prepare artistic food presentation. Blades are forged from layers of laminated steel with hard carbon steel core that is incredible sharp but not intended for frozen food or hard cutting. Hocho knives are designed for pull cutting for better knife control. Rough handling will subject blade to chipping and other damages. Care in storage as not to mixed with other metallic utensils that can chip its sharp edge.
Note carbon steel need water stone mesh 3000 – mesh 6000 in sharpening. Do not use mechanical sharpener or sharpening steel. Keep dry and oil with camellia prior storage. Carbon steel is not stainless and will rust if not dried and stored properly.
